HOMEMADE SPELT HEMP TOASTER WAFFLES – recipe + hemp facts
I like to focus on adding more nutrition to the foods I make – it’s a hell of a lot more fun than taking away the “unhealthy” bits. I think that is what people call elevated. To elevate these homemade toaster waffles, I added 1 cup of Manitoba Harvest hemp hearts and used sprouted spelt flour (<- my current favorite flour!).
Make a large batch of these waffles and freeze them. When ready to eat, reheat them in your toaster and you are ready to roll. I don’t add sugar to the waffles to keep them more neutral in flavor – use them for a sweet breakfast or for savory waffles.
WHAT ARE HEMP SEEDS?
Shelling the hemp seed produces the most nutritious and tender part of the seed, the heart. The hemp hearts contain omegas 3 and 6 and twice the amount of protein compared to flax or chia. Hemp hearts taste great, are easy to use, and nutritious too! There’s no need to grind or cook hemp hearts, simply sprinkle them on salads, pasta, cereal, or yogurt or blend them into smoothies. Add a few spoonful to baking, chili, soup, or almost any cooking – savory or sweet.
Whenever possible, try sourcing your ingredients organic, local, and fair-trade. Or do your research and find out the sourcing of your ingredients to make sure they are coming from people you trust, and that they made with the same values that are important to you.
HOMEMADE SPELT HEMP TOASTER WAFFLES
6 g protein per waffle / omega 3 and 6 / iron / healthy fats
makes 16 waffles depending on size
2 cups sprouted spelt flour
1 cup Manitoba Harvest hemp seeds
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups milk (organic dairy or unsweetened non-dairy)
2 tablespoons apple cider vinegar or lemon juice
1/2 cup coconut oil or butter, melted
2 large organic eggs
Oil spray, for waffle iron
In a medium bowl, whisk together flour, hemp seeds, baking powder, baking soda, and salt; set aside. In a large bowl, whisk together milk, vinegar, coconut oil, and eggs. Add flour mixture to wet ingredients and mix until batter is just combined.
Heat waffle iron according to manufacturer’s instructions; Use cooking spray to grease iron. Depending on the size of your waffle iron, add 3/4 cups (usually for a two waffle iron) to waffle iron. Close iron; cook until waffles are golden brown, 3 to 5 minutes. Transfer to cooling rack; repeat with remaining batter. Once all waffles are cooked and cooled, add to a freezer bag or container and freeze.
When ready to eat, toast waffles until crisp and serve as desired.
