SALMON FURIKAKE HAND ROLLS AND SUSHI BOWL RECIPE - kid-friendly recipe

This month I partnered with Gold Seal to create a kid-friendly recipe using their canned Wild Pink Salmon. Lucy LOVES sushi and loves canned fish too. So, inspired by her we whipped up some SALMON FURIKAKE HAND ROLLS for lunch a few days ago.

Hand Rolls look a little intimidating to make but are actually super easy to pull together. Make some sushi rice, prepare veggies and salmon, and then place down on one side of a half sheet of nori then roll into a cone. Make sure to angle all your fillings with the top corner of rice so the rolling into a cone will be easier.

Below I have a shopping list with everything you’ll need (trying shopping your own fridge and pantry for similar ingredients) and then you can follow to link to Gold Seal’s website for the full instructions. If you don’t have the exact ingredients I would love to challenge you to make them with what you have on hand (no unnecessary trips to the grocery store right now, please!). The beauty about a recipe like hand rolls is you can fill them with anything and if you don’t have sushi rice you can opt for whatever you have -try experimenting with different types of grains like quinoa. 

By the way, one reason these are super kid-friendly is that they are so easily customizable. Let your little ones choose their own fillings and let your older ones try rolling some cones themselves. I love any meal that gets more little hands in the kitchen.

Salmon Furikake Hand Rolls are a kid-friendly snack or meal that adults will love too! And full of so much good -- omega-3’s, vitamin D and protein from the salmon; healthy grains, veggies, and seaweed which is rich in minerals.

And Lucy loved them! I will always feel blessed for my good little eater (and let's all hope Addy turns out the same way). Plus, I have a bonus recipe for you below for if you are not into making hand rolls. SALMON FURIKAKE SUSHI BOWL has the same flavours but a quicker assembly. 

Shopping List
Salmon Furikake Hand Rolls (6-8 rolls)

- sushi rice (1 cup)
- rice wine vinegar
- Gold Seal Pink Salmon Skinless Boneless (1 can (170g))
- furikake (can be found at many Asian Supermarkets)
- green onions (1-2)
- toasted dried nori-
- Veggie Options (choose 2-4 of your favourites: alfalfa sprouts, avocado, carrots, cucumbers, enoki mushrooms, lettuce, pea shoots)

Pantry Staples:
- sugar
- salt

RECIPE
Salmon Furikake Sushi Bowls

-all the same ingredients as above
-½ cup shelled edamame
-3 tbsp mayo
-3 tbsp sriracha
-1/2 tsp sesame oil
-1 tsp sesame seeds
-¼ tsp sweet soy (optional)
-olive oil
-soy sauce

Prep:

  1. Cook sushi rice according to package directions. Once cooked, transfer to a large bowl (preferably wooden) and gently mix in sushi vinegar, sugar, and a few pinches of salt. 

  2. Open Gold Seal Pink Salmon Skinless Boneless and drain liquid. Combine salmon, furikake, and green onions in a bowl. Being careful not to break up salmon pieces too much. 

  3. Prep all veggies into small thin pieces about 3-4 inches long. 

  4. Combine mayo, sriracha, sesame oil, sesame seeds, and sweet soy (optional).

Assembly:

  1. In each serving bowl, add a base of sushi rice and top with veggies, salmon furikake, and nori torn into small pieces. 

  2. Lightley season with olive oil, soy sauce, and spicy mayo dressing.
