EVERYDAY OVERNIGHT CHIA OATS - plant-based, make ahead breakfast

Being a new Mother, I find the hardest meal to eat is breakfast. I was already a chronic breakfast skipper but now with breastfeeding and getting less sleep, I find I have to eat in the morning – my body needs the fuel now more than ever. I need something quick, filling, and ALWAYS delicious. These oats are easy to throw together, and very very satisfying. It’s easy to switch up the toppings so that you arn’t eating the exact same thing every morning because no one wants to do that. I try to make at least one batch of these a week and a container of fruit to top it with. Then when I am ready to eat even if I have to hold Lucy, I can make up a bowl with my free hand.

Eating creamy oats + watching Lucy play = HEAVEN. Who wouldn’t want to see that smile while they eat breakfast?

EASY TOPPING COMBINATIONS

Cacao Nibs + Peanut Butter
Sauteed Apple + Cinnamon
Caramelized Banana
Frozen Berries (defrosted and served with their juices)
Dried Fruits + Orange + Cinnamon
Toasted Coconut + Mango

Whenever possible, try sourcing your ingredients organic, local, and fair-trade. Or do your research and find out the sourcing of your ingredients to make sure they are coming from people you trust, and that they made with the same values that are important to you.

EVERYDAY OVERNIGHT OATS

15 g protein per serving / omega 3 and 6 / iron / healthy fats / slow digesting carbs

makes 3 servings

1 can coconut milk (about 2 cups)*
3/4 cup rolled oats
1/4 cup chia
1/4 cup hemp hearts
1/4 cup maple syrup (or coconut sugar)
Pinch salt

  1. Combine all ingredients in a bowl. Transfer into a container and store in the refrigerator for up to 5 days.

  2. When ready to serve, portion out 1 serving (1/3 of the recipe) and top with desired toppings.

*these oats are very rich, if you are wanting a lighter version use coconut milk beverage instead of the canned coconut milk OR use 1 can coconut milk + 1 cup water
